Born Pinner, Budding Chef | 10 Healthy Super Bowl Snacks

Today's the big day, pigskin fans! Yeah, yeah there's a game, but more importantly there are commercials, a Halftime Show and Super Bowl snacks. Amiright?! While the Super Bowl is not a holiday celebrated in my house (the Love of My Life is more of a World Cup guy, less of an American football guy), I still find myself craving everything that is naughty, but so damn delicious in the typical Super Bowl Sunday lineup (on the table, I mean, not the field. But there, too).

But after everything I learned about nutrition in 2014, most of the typical lineup is not approved 'round here any more. So even though the game won't be on at home tomorrow, I'll be making a lineup of naught-naughty snacks to munch on while I keep track of the game (read: commercial and Halftime Show commentary) on Twitter. I wouldn't want to be un-American, after all.

What snacks do you have on the menu? If you're looking for a last-minute healthy alternative to throw in between the chicken wings and Doritos, check these bad boys out. They're also yummy options to get the kids involved in helping you create (and eat). All of these recipes are collected on this Pinterest board for your reference (except #1 because it's my recipe), as well.

Killer Kale Chips

Don't shut down just because your ears heard "kale," which doesn't typically sound as good as "chips." Just trust me on this one; try these once and then tell me what you think. It couldn't be more simple, and they will probably be so popular you'll need to quadruple the recipe:

What you'll need:

  • A bunch of kale
  • Olive oil
  • Paprika
  • Nutritional yeast
  • Course sea salt (or finishing salts)
  • Pepper

What you'll do:

  • Pre-heat the oven to between 375 and 400 degrees (depending on how hawt your oven is).
  • Chop up the kale and toss it in a big bowl with the olive oil, nutritional yeast, salt, pepper and paprika.
  • Bake for 10-15 minutes, and stir/toss every few minutes to make sure it's not burning.

Veggie Quesadilla with Beet Greens Pesto

Warm and cheesy, but also packing some nutrients. That's win-win. Click here to see what you need and what you'll do.

[Two fry options]: Green Bean Fries with a Trio of Dipping Sauces or Crispy Eggplant Polenta Fries with Honey + Lime

I couldn't decide between these two. They both sound crunchy, salty and yummy. Click on the names above to see what you need and what you'll do.

Prosciutto-Wrapped Asparagus

Crispy prosciutto and sautéed asparagus wrapped in a loving embrace? Yes and yes. Click here to see what you need and what you'll do.

Banana Sushi

It's sweet (the only sweet in the mix), it's clever, it's on my menu. Click here to see what you need and what you'll do.

Avocado Hummus with Veggies/Crackers

Hummus is always a winner, but avocado hummus? Extra good for you and extra tasty. Click here to see what you need and what you'll do.

Smoky Butternut Squash 'n' Greens Mac'n'Cheese

Because you need something hearty on the menu. You will never know this is vegan, it's so damn good. Click here to see what you need and what you'll do.

Lentil 'Meatballs'

Like the mac'n'cheese, this is another hearty option that's sneaky about being incredibly good for you. Click here to see what you need and what you'll do.

Balsamic-Roasted Brussels Sprouts with Pine Nuts and Parmesan

I'm obsessed with brussels sprouts and these sound divine. Click here to see what you need and what you'll do.

Bacon Corn Dip

I didn't say they were all entirely void of meat! Besides, bacon is... bacon. It needs no explanation. Click here to see what you need and what you'll do.
